Pin a doc and it sticks to the top of the sidebar regardless of which folder it's in. Useful for the meeting-notes doc you open every day or the project-plan you keep coming back to.
You can write 50 docs in your default library before you ever think about folders. When the list gets unwieldy, the organizing tools are there. Until then, they're out of the way.
